Beet salad.. better than it sounds.

I don’t have a juicer so I’m always looking for other great ways to have a  body detox themed weekend and I am often wanting to jazz up my innards for the coming spring or summer weather. This recipe is one I found online by Preeti Guntecha, a nutriton and lifestyle coach whose article I came across on Mindbodygreen.com a website I love a lot. It’s full of awesome life, food and health tips for the everyday life of a person who is  both busy but interested in being continually healthy, both physically and spiritually.

Ingredients:

1 tsp cumin powder( optional) – Sea salt & ground pepper (optional)

2-3 beets

1/2 red cabbage, chopped

2 tbsp apple cider vinegar

2 stalks of celery, chopped

1 cucumber

1 green apple, chopped

cilantro, chopped

Juice of 1 or 2 lemons

My Add-ons: I think adding a little bit of feta cheese,little mandarin orange slices, sliced red onion ( bc I am obsessed) and/or arugula would go really jazz this up. And it looks pretty too.

 

Process

Boil a pot of water and place the beets in the water. Let boil for 10-12 minutes until beets are cooked.

Peel and slice beets.

Mix all ingredients and toss well.

Add salt and pepper to taste. You may also add cumin powder for added flavor.
